Cooking with Carson: Peanut sauce chicken

Freshen up your summer with this delicious meal



For flavorful chicken, allowing it to sit in marinade overnight will produce the best results.

Since I have been trapped in Pullman over the summer, I have endeavored to start eating healthier despite chicken sandwiches from The Land calling my name. I have also been craving something with peanut sauce, so this recipe will bring the two together for a delicious combo!

My friends and I decided to place the chicken in spring rolls, which gave the dish a nice, fresh punch when the weather was so rainy. The marinade I made was a Frankenstein’s monster of ingredients I had on hand.

You know what kind of flavors you like eating best. While I would encourage you to try new things, cooking is supposed to be enjoyable! That being said, I believe this mixture is a great recipe that tasted yummy on an oddly chilly summer night.

Taste aside, this recipe was incredibly easy to make and very light on the wallet – something every aspiring chef should take note of! With one large chicken breast, I was able to serve three people to their stomachs’ contentment.

One important note – when you are marinating meat, time is the name of the game. You can certainly wait a few hours for the meat to sit in the marinade, but the best results come from letting it sit overnight!

In the meantime, sit back and relax. This is an easy dish to prepare, cook and eat. If you need to substitute a specific ingredient then that is totally fine.

  • 1 large chicken breast
  • 1 jar peanut sauce (+1 for some extra dipping sauce)
  • 1 teaspoon of dark soy sauce
  • 1 teaspoon of mirin
  • 1 teaspoon of chili oil
  • 2 teaspoons of oyster sauce
  • 2 teaspoons of honey


  • Carrots
  • Green onions
  • Bell peppers
  • Spinach
  • Rice paper


Prep Time: 10-20 minutes or overnight

Cook Time: 15-20 minutes


  1. Add all of the sauces into a Ziploc bag and mix them together.
  2. Add the chicken, and make sure it is well covered.
  3. Place it in the refrigerator for a minimum of four hours. Overnight is much better.
  4. Get ready to prepare!

Cooking and Shredding the Chicken

  1. Take the chicken out of the bag, and slice into small chunks.
  2. Cook on both sides, adding salt and pepper to taste (COOK YOUR CHICKEN ALL THE WAY TO 165 DEGREES).
  3. Place the cooked chicken into a mixing bowl and shred it with a hand mixer or two forks.
  4. Prepare any other spring roll mix you have.

Spring Roll

  1. Soak your rice paper lightly in water.
  2. Lay it out on a cutting board or otherwise flat surface.
  3. Put a small amount of each ingredient onto the spring roll.
  4. Roll!
  5. Dip it in a bit of extra peanut sauce.
  6. Get ready to be amazed!
