Five-minute mug cake
Perfect quick dessert to make with friends, significant others; gluten-free option available for all to enjoy

Did you forget to do something for Valentine’s Day? Well, don’t worry, these mug cakes are super easy and are sure to impress whoever you want to share them with.
For this recipe, I used a small ceramic dish instead of a mug, for a better presentation. But then again, I am living at my parents’ house and not in my apartment where mugs take up most of our cabinet space. So, if you only have a mug to use, that’s cool, it will still taste delicious.
This recipe can be made gluten-free if you use 2 tablespoons of almond flour and 2 tablespoons of coconut flour as a substitute for the regular flour that is used.
INGREDIENTS:
4 tablespoons of flour
4 tablespoons of sugar
2 tablespoons of cocoa powder
1 teaspoons of baking powder
1 teaspoons of cinnamon
2 eggs
2 tablespoons of melted coconut oil (or any oil you use for cooking)
2 tablespoons of almond milk (or your choice of dairy/non-dairy products)
A handful of chocolate chips
Whipped cream
4-5 strawberries
INSTRUCTIONS:
Mix all dry ingredients in a medium-sized bowl (including, flour, sugar, baking powder, cinnamon, and cocoa powder).
Melt coconut oil in the microwave, (if your oil is already in liquid form, skip this step).
Pour in oil, milk, and both eggs into the bowl and mix until smooth.
Use non-stick spray to coat 2 of your mugs.
Split the mixture between the two mugs and put in the microwave for 1:45-2:00 minutes.
Cut up strawberries while waiting for the microwave.
Put whipped cream on top of the mug cake and place cut up strawberries on top (of course optional, but presentation is cool).
