This columnist rounded up some simple, easy-to-make recipes online for everyone in need of a nice meal at home

                With grocery stores being one of the only places open during the week, they are consistently busy. If you’re not inclined to leave your house, however, there are alternative options: use what you have in your kitchen and whip something up!

                Below are meal plans that are quick and easy to make, all with ingredients right in your house.

Chicken Fajitas

1 lbs. of skinless chicken

3 bell peppers thinly sliced 

1 onion cut into slices 

¼ cup lime juice

2 tsp. cumin

½ cup of olive oil

tortillas

Whisk olive oil, lime juice and cumin in a small bowl. Marinate chicken for one hour. Heat the stove and fry chicken until golden brown. Add bell peppers and let cook for roughly 5 minutes or until soft. Serve in warm tortillas.

Easy Beef and Broccoli

⅔ cup soy sauce

¼ cup honey

2 tablespoons brown sugar

3 garlic cloves, minced

1 tbsp cornstarch

1 tbsp olive oil

1 lbs. flank steak

1 head of broccoli, sliced

                Whisk in a small bowl soy sauce, honey, brown sugar, garlic, cornstarch, and a ¼ cup of water; set aside. Heat some olive oil in a large skillet. Add meat and cook until desired color. Stir in broccoli and and soy sauce mixture until tender, roughly 3-4 minutes. Serve, and voila. Recipe from Damn Delicious.

One Pan Sausage and Veggies

1 small red potato

1 head of broccoli, sliced

1 ½ chopped bell peppers

½ lbs. green beans

6 tbsp. of olive oil

½ tsp. of garlic powder

¼ tsp. of salt & pepper

serve with rice if desired

                Preheat the oven to 400 degrees. Line a large pan with parchment paper. Prep and chop veggies. Place sausage and veggies onto the pan. Pour some olive oil over top, and sprinkle spices on top. Bake for 15 minutes, then pull out the pan and flip veggies. Rotate pan and bake for an additional 10-15 minutes. Serve with optional rice. Baked Spaghetti

16 oz. of spaghetti noodles 

1 lbs of ground beef

1 jar red sauce

1 can tomatoes

2 garlic cloves, chopped

1 onion, chopped

1 cup of mozzarella cheese 

                Preheat oven to 350, and spray a medium baking dish. Cook spaghetti noodles. Drain and set aside. Saute onion and garlic cloves for 5 minutes. Add ground beef. Cook to desired color. Pour out fat, and add canned tomatoes. Let simmer. Mix with spaghetti noodles, and combine into pre greased baking dish. Top with mozzarella cheese. Bake until cheese is melted and pasta is warmed, roughly 20 minutes.

Crockpot Chicken Soup

1 lbs. chicken breasts

10 cups chicken broth

3 carrots, chopped into “coins”

2 stalks of celery

1 onion, finely chopped 

3 cloves of garlic, minced

8 oz. of egg noodles

                In a slow cooker, add carrots, celery, chicken, onion, garlic, and other spices you wish to include. Pour broth over top. Cover and cook on low for about 6 hours. Remove chicken from cooker and shred with forks. Return chicken to cooker and add egg noodles. Slow cook for an additional 20-30 minutes.

Instant Pot Chili

1 lbs. ground beef

1 can kidney beans

1 can black beans

1 can diced tomatoes

1 onion, chopped

2 cups beef broth

3 cloves garlic, minced

2 tbsp. tomato paste

                Set Instant Pot to “Saute” function and add oil. Add onion and cook until soft, or roughly 5 minutes. Stir in garlic, then add tomato paste. Stir. Add ground beef and cook until no longer pink. Add broth, beans, tomatoes, and other spices. Lock the lid and cook on “High Pressure” for 14 minutes. Top with sour cream, cheese,and green onions. Stuffed Bell Peppers

½ cup of uncooked rice

½ lbs of chicken or beef

1 onion, chopped

3 cloves of garlic

1 can of diced tomatoes

1 cup of mozzarella cheese

                Preheat the oven to 400. In a small pan, prepare rice. In a separate pan, add light oil and cook onion until soft, roughly 5 minutes. Stir in garlic. Add ground beef to pan and cook until desired color. Stir in cooked rice and tomatoes when the beef is finished. Let simmer for about 5 minutes. In a 9 x 13 baking dish, place halfs of peppers. Spoon beef mixture into each pepper and top with mozzarella cheese. Bake until tender, roughly 35 minutes. Recipe from Delish.

Cheesy Goulash

1 ½ cup of elbow noodles

1 onion, finely chopped

2 cloves of garlic

1 lbs. ground beef

1 ¼ cup beef broth

1 can tomato paste

1 can diced tomatoes

1 cup shredded cheddar cheese

                In a pan, add light oil and cook onion until soft, roughly 5 minutes. Stir in garlic. Add ground beef to pan and cook until desired color. Pour in broth, tomato sauce and diced tomatoes. Season and add noodles. Bring to a simmer and let cook for about 15 minutes. Stir in cheese and remove from heat. Recipe from Delish.

Ravioli Lasagna

1 lbs. ground beef

½ onion, chopped

2 cloves garlic, minced

1 jar marinara

16 oz. ricotta

1 egg

1 cup Parmesan

12 oz. (2 bags) frozen ravioli

                Preheat the oven to 350. Spray a 9 x 13 pan. In a pan, add light oil and cook onion until soft, roughly 5 minutes. Add ground beef to pan and cook until desired color. Stir in garlic and marinara and reduce heat. In a bowl, mix egg, ricotta, Parmesan, salt and pepper. Stir to combine. Spread ⅓ of prepared meat onto the bottom of the pan. Top with a single layer of ravioli. Add meat mixture to cover. Add ricotta mixture. Add mozzarella and Parmesan. Repeat until gone. Cover the pan with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes.

Breakfast for Dinner: 

3 eggs

splash of milk

1 package of bacon

2 pieces of toast

fresh fruit of your choice

                In a pan, drizzle some oil. Lay slices of bacon in the pan, and flip when you begin to see the sides turn from pink to brown. In a bowl, whisk the 3 eggs and splash of milk together. Heat a different pan and drizzle some oil. Pour mixture into pan, and season with salt and pepper. Let cook for about two minutes, then flip over and scramble. Return to bacon to check. Put toast in toaster and when popped, garnish with butter and your choice of jam. Place bacon, eggs and toast on a plate. Add fresh fruit of your choice.
