New food truck to hit Pullman streets
Duo to serve American dishes; community members can submit family recipes
June 14, 2020
Acacia Kapusta and Jesse Pollard are turning their passion for cuisine into a full-time job by opening a food truck inspired by American dishes in Pullman.
Among Other Things will give them the opportunity to manage their own business and travel when needed, Kapusta said.
The duo started planning for the food truck in September 2019. Kapusta said the current state of business encourages restaurants to have takeout and curbside dining options.Â
The food truck will include menu items deriving from American comfort food and authentic international cuisine items. Community members will also be able to submit family recipes, Kapusta said.Â
Kapusta got her bachelor’s degree in hospitality management from California State Polytechnic University, Pomona and a master’s degree in student affairs from San Diego State University. Pollard has no formal training.Â
Both Kapusta and Pollard are confident to serve new and authentic food to the community and especially students around town as they return, Kapusta said.
Kapusta said they do not have an exact location set up yet; however, they have hopes to sell food around Greek row and various apartment areas in town.Â
The mission of the food truck is to serve students, as well as the community, with high-quality meals at an affordable rate. They have hopes of serving lunch, dinner or a late-night menu, Kapusta said.
Another food truck in Pullman is Fork in the Road. It is a catering food truck, which is a branch of the Pullman-based restaurant South Fork Public House.
Cathy Harbour, Fork in the Road manager, said many factors have remained up in the air about what summer and fall will look like for the truck.
Fork in the Road gained a majority of its business through catering events, such as weddings, community events and Greek happenings. Many of the upcoming events were either postponed or canceled.
With fall up in the air, Harbour said it is hard to predict how their business will be affected in terms of catering to different activities and Greek functions.
