Sweet potatoes contain high amounts of beta-carotene, which is what gives the potatoes their yellow and orange color, according to the Healthline website. The beta-carotene is converted into vitamin A in our bodies, which is crucial for eye health. Deficiency can lead to eye damage that may be irreversible, according to the website.

One sweet potato contains almost no fat and is about 77 percent water. There are three types of starches based on their different characteristics and about 80 percent of them are easy to digest and are rapidly absorbed into the body, according to the website. They are a healthy swap for regular potatoes, with more fiber, vitamins and minerals.

These potatoes can be used for sweet or savory meals and snacks. For a simple, yet flavorful side dish or snack, one could slice them, lightly coat them in olive oil, season them with salt and pepper, then bake them for about 15 minutes. These sweet potatoes can be made into fries to potentially curb cravings for fast food options.

For a sweeter alternative with even more nutrients, they could be seasoned with cinnamon and nutmeg. In many recipes, such as chili and mashed potatoes, they can be used interchangeably with regular potatoes. They can also be made into sweet potato bread and pie.
